Quick Lime Cilantro Chicken

Quick Lime Cilantro Chicken

Ingredients

  • Boneless Chicken, 3 breasts
  • Limes, 3 or 4
  • Garlic, 4 to 6 cloves
  • Olive Oil
  • Cumin
  • Cayenne or Chili Powder
  • Cilantro, 1/4 cup, snipped
  • Avocado, optional

Instructions

  1. Mince the garlic, snip the cilantro and zest a lime. Juice the lime carcass along with two more limes. Cut a lime into wedges and slice and avocado for the table.
  2. Cut the chicken into chunks. You can skip this and cook them whole but chunks cook faster.
  3. Pour a little olive oil into a large skillet or saute pan, just enough to not quite cover the bottom. Heat it over medium high heat until it’s very hot, almost smoking. Add the chicken and let it cook undisturbed.
  4. Once the chicken is browned nicely on the bottom and will easily let go of the pan, sprinkle it generously with cumin and chili powder or pepper. Let it cook another minute or two, until the white line has moved about halfway through the pieces.
  5. Turn the chicken and let it cook another couple of minutes, long enough to brown. Reduce the heat to medium low and sprinkle in the garlic and lime zest. Stir it little and let it cook another couple of minutes but be careful not to let the garlic burn.
  6. Once the chicken is cooked through add the lime juice and stir up all the browned goodness from the pan.
  7. Remove the chicken to a bowl or platter and sprinkle it with cilantro.

        • Tried this and it was wonderful. I put cumin, chili powder, and sprinkled lightly of the Cayenne. My limes were plumper so because they produced so much juice I didn’t put it all in..this would be good on a salad too. Just loved this and it wasn’t hot even with a that Cayenne in it.

    1. Made this tonight…easy and delicious but I put way too much cayenne papper in it. Next time I will use chili powder. I have been looking for easy chicken recipes. I will definitely make this again. My hubby loved it too even though he has been saying he is sick of chicken.

    1. Tried this tonight i had the cilantro in that comes in a tube, i mixed it in witg the lime juice and added it towards the end…amazing..even my 20 month old loved it!!

    1. I did not like this recipe at all. Even my fiancé who eats everything didn’t want to finish dinner.

          I think though the lemon juice was too much I’ll just use a quarter if I try it again.
          Had to tone it down with some tiny banana and shredded coconut on the side to silence the palette.

    1. I made this tonight, and it was delicious! The only thing wrong was that the lime flavor was a little over powering. Do you have any suggestions for me to make it little more mild? Less lime like juice or less zest?

    1. I thought this turned out pretttty delicious! I did;however, change up the recipe a bit. I used two thin slices of chicken, 1 lime- juiced, and used the zest from that one lime.. then added a little more juice just to taste to my liking – but not much more. I also added in soy sauce, and used coconut oil instead of evoo. And lastly, I put some of the fresh cilantro in the skillet with the cooking chicken. I paired my chicken with half a sweet potato, my husband had his with roasted golden potatoes.

    1. I made this tonight and I agree with the amount of lime juice used. I only used one lime for the juice and zest. I didn’t have garlic so I used garlic powder. I sprinkled on the garlic powder, the chili powder and the cumin powder over the chicken. I didn’t measure just shook it over. Probably will add more of each the next time for it was rather bland to me…my fault. I added the zest as well. I did however add to the lime juice a 1/2 tsp of honey because I love honey and I like sweet a little sweet in my chicken. I wished I had added more for I ended up drizzling the honey over the finished product anyway :D. I did chop/snip the cilantro and sprinkled it over the chicken in the end finding out I am not a fresh cilantro fan. I tried! I really did! Overall a great idea and I will try making this again!

    1. This was easy but I too found the chicken bland. You can taste the lime and cilantro but the chicken was pretty flavorless in my book. It might be my Latina palate. Next time I’ll add salt adobo and maybe Sazon and a little less lime juice.

    1. saw this today as I was thinking about lunch. Happen to have everything on hand and whipped up a batch to add to a salad. FANTASTIC! and the smell of the cumin was amazing. This is a keeper!

      (For those who say this is bland haven’t added enough cumin and chili poweder. Might also help to cut into chunks before cooking so the seasoning gets all over every delicious bite)

    1. made this tonight and the family loved it. However, no way I’m cooking chicken with no salt. Also, the recipe only says to season one side of the chicken. So, what it did was throw all the chicken pieces in a bowl. I then added seasoned salt. Cumin, chili powder and a little cayenne and mixed all up real good so the chicken was well coated with the spices, adding a bit more of each if needed to cover all the chicken. Then cooled as described above.

    1. I absolutely love this recipe. I work long days so I normally don’t cook,but I made it twice already in one week. I had to google how to “zest a lime” because I had never done it before, but it’s still easy to make and hard to mess up. The amount of lime juice is a little too much for me so the second time I made it I used just enough lime juice to wet the chicken and give it flavor. I paired it with cauliflower mash. Came out perfect. Thank you for this easy recipe and I’m sharing it with my friends.

    1. Love all of the flavors in this recipe. I’m in the process of making this for dinner tonight. Instead of sprinkling the spices as it cooks I made a marinade out of the lime, cilantro, spices and evoo. Everything is better when marinated!! We’ll see…..

    1. I agree that the chicken was bland and the citrus, a bit overpowering. It’s still good but will make some adjustment next time. Made a mistake of not reading comments ?

    1. Just made this and really had to doctor it up… I only used 2 limes and no zest and it was so overpowering that I had to add a little brown sugar and orange juice to calm it down…

    1. I made this the other night and it was DELICIOUS! I followed the recipe exactly except I added a pinch or two of salt. Served over rice and my husband and I both loved it! Definitely a keeper!

    1. Loved it! Only used 2 limes as they were very plump. MUST add salt to chicken while cooking next time. Unfortunately, did not use cayenne pepper it would have given it a little flavor.
