Homemade Samoa Girl Scout Cookies

Ingredients

  • For the cookies:
  • 1 cup (2 sticks) unsalted butter, at room temperature
  • 1/2 cup sugar
  • 2 cups all-purpose flour
  • 1/4 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2 Tablespoons milk
  • 1/2 teaspoon vanilla extract
  • For the coconut topping:
  • 3 cups shredded sweetened coconut
  • 15 ounces store-bought
  • 3 Tablespoons milk
  • 1/4 teaspoon salt
  • 8 ounces dark chocolate (See Kelly’s Notes)

  1. 15 oz of store- bought what????

    • I think the 15 oz of store bought would be caramel. I have never made these but I may try, and from looking at the pictures and the list of ingredients the only thing not noted is the caramel. So let me know if I am wrong so I can try and make them too.

    • I think it means “15 oz of store bought” is the same as 3 Cups of coconut. Not positive.

      • I just found another recipe by Kelly that gives the right amount of the “15 ounces of store bought” and it is caramel. Here is the recipe:

        FOR THE COOKIES:

        1 cup (2 sticks) unsalted butter, at room temperature
        1/2 cup sugar
        2 cups all-purpose flour
        1/4 teaspoon baking powder
        1/2 teaspoon salt
        2 Tablespoons milk
        1/2 teaspoon vanilla extract
        FOR THE COCONUT TOPPING:

        3 cups shredded sweetened coconut
        15 ounces store-bought or homemade soft caramels
        3 Tablespoons milk
        1/4 teaspoon salt
        8 ounces dark chocolate
