Grain-Free Pumpkin Bars


  • 1/2 cup pumpkin puree
  • 1/2 cup almond butter
  • 1/3 cup honey
  • 2 eggs
  • 2 teaspoons pumpkin pie spice*
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon sea salt
  • 1/2 teaspoon baking soda


  1. Preheat oven to 350F and grease an 8″ x 8″ pan generously with coconut oil or butter.
  2. Combine all of the ingredients in a medium bowl, and mix well until a smooth batter forms.

  1. I tried this recipe twice, once using acorn squash and one with butternut squash. I used them raw and added all ingredients to a high powered blender. I lengthened the cook time as needed and the results were DELICIOUS.
