Cinnamon Roll Pancakes

Cinnamon Roll Pancakes


  • For Pancakes:
  • 1 cup all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1 Tablespoon canola oil
  • 1 large egg, lightly beaten
  • (OR use a boxed pancake batter)
  • Cinnamon Filling:
  • 1/2 cup butter, melted
  • 3/4 cup packed brown sugar
  • 1 Tablespoon ground cinnamon
  • Cream Cheese Glaze:
  • 4 Tablespoons butter
  • 2 ounces cream cheese
  • 1 1/4 cups powdered sugar
  • 1 teaspoon vanilla extract


  1. Prepare Cinnamon Filling first: In a medium bowl, mix butter, brown sugar and cinnamon. Scoop the filling into a small zip baggie and set aside. (You want this to rest and ‘set up’ while your preparing the other ingredients. Its best if it gets a little thicker, you dont want it liquidy)
  2. Prepare Pancake batter: In a medium bowl whisk together flour, baking powder and salt. Whisk in milk, oil and egg just until batter is moistened. (a few small lumps are fine)
  3. OR If using a boxed mix, prepare according to package directions.
  4. Prepare Cream Cheese glaze: In a medium glass or microwave-safe bowl, heat the butter and cream cheese until melted. Whisk together until smooth, then whisk in powdered sugar and vanilla. Set aside.

  12. I just made these and they’re delicious. All you have to do after step 4 is make them like you would a regular pancake but drizzle the cinnamon & sugar mixture in a swirl pattern.

  16. For me, the batter turned out WAY to thick, I doubled the recipe for the pancakes and thankfully I didn’t double the cinnamon filling portion because there was way more than I needed. They were just a big mess, I will not be making these again

  19. I’m in the process of making these. I followed the directions posted and the batter is a bit runny and you have to let the cinnamon mix sit for a long time for it to set. I put mine in the freezer and am still waiting! I made one pancake before it set properly and it just over ran the batter and was a mess… Not sure if this is a very we’ll explained recipe or not. I’m sure as long as you let your cinnamon mix set, everything works out fine.

  22. I made these pancakes and they are good, but a little messy in the making.

    First, you want to make sure your pancakes are not too thick when you first drop them. I used the back of a spoon to spread them out a little.

    Cut a small piece of the baggie corner off so you can squeeze the cinnamon mixture in a swirl pattern on top. Do not get too close to the edge of the pancake or it will make a bigger mess.

    Wait until the pancake batter is dry looking throughout before flipping. The recipe is misleading because the cinnamon is not filling. The butter and sugar cook to form a crystallized hardened glaze on the one side of the pancake. Anywhere the filling is placed will leave a crevice because there is no pancake batter there. If you do not let it cook enough on the first side your pancakes will not be done. The second side mainly cooks the sugar glaze. I learned this the hard way. That is why you should make your pancakes spread out and thinner.

    The cinnamon filling will be messy. I had to scrape away glaze mess after making each pancake. Also I only made 2-3 at a time so I could get swirls on them.

    I added icing on top, and two were plenty filling for me, even though I could usually eat 3-4 pancakes. They were delicious, but pretty messy to make (especially with poor directions and unsure of the end result). Hope this helps someone else who wants to make them.

  23. You guys don’t need anything past step four! Pour your pancake batter on the grill, let it set for a minute then cut a hole in bottom corner of ziplock bag and pipe the cinnamon mix in a pinwheel fashion. Then flip it once pancake starts to bubble. Pour icing over top once done. Pretty self explanatory from the picture
