Chocolate Caramel and Pecan Turtle Clusters


  • 2 1/2 C pecans
  • 1/2 C butter (I use salted)
  • 1 C brown sugar
  • 1/2 C light corn syrup
  • 7 ounces sweetened condensed milk (1/2 of a 14 ounce can)
  • 1/2 t vanilla
  • 1 (12 ounce) package milk chocolate chips
  • 1/2 t shortening (I use butter flavored Crisco)


  1. Preheat oven to 350 degrees. Arrange pecans in a single layer on a rimmed baking sheet; toast in oven until fragrant, about 10 minutes. Remove from oven (leave oven on); set aside 36 pecans on baking sheet. Finely chop remaining pecans (for about 1/4 cup); set aside.
  2. When pecans are cool enough to handle, make 12 clusters by arranging 2 pecans vertically, side by side, below 1 pecan placed horizontally. Gently flatten each caramel; place 1 on top of each cluster. Bake clusters 5 minutes. Remove from oven (leave oven on).
  3. Place 1 piece of chocolate on top of each cluster. Return to oven; bake until chocolate begins to melt, 1 to 2 minutes. Remove from oven.With the back of a spoon, gently spread chocolate over caramel without completely covering it.
  4. Sprinkle clusters with reserved chopped pecans. Refrigerate until set, about 15 minutes. Bring to room temperature before serving.

  2. I love how easy this recipe sounds! Sometimes candies that involve making caramel seem quite difficult and time consuming….and I’m just too impatient for that

  3. The recipe doesn’t tell you how to make the caramel sauce. It is written for already made caramels.

  4. Somehow the printed directions do not go with the ingredient list!!

  5. This recipe makes absolutely no sense. What do you do with the butter, the condensed milk, the brown sugar and the Crisco?

  6. The recipe calls for sweetened condensed milk, brown sugar, butter, vanilla, corn syrup and shortening, what do you do with them? Also the directions say place a Carmel on the pecans but the recipe doesn’t even mention them. They do look good though!

  8. i was going to make these,they look like they are easier than the old way,but recipe is so mixed up,i decided not to make them

  11. Or just Put a pretzel, pecan, and then melt a rolo(chocolate and Carmel candy piece) on top. Much easier!

  12. Ladies: the caramel is
    1/2 cup butter
    1 cup brown sugar
    1/2 cup light corn syrup
    7oz. Sweetened condensed milk
    1/2 tsp. vanilla
    place first 4 ingredients into a sausepan and heat on medium until the caramel reaches 234-240 F then stir in the vanilla. Scoop the caramel 1 tablespoon at a time onto cookie sheet line with partchment paper put 2 toasted pecan halves onto each caramel scoop, let it cool in freezer until firm then dip in chocolate and cool once more in freezer until chocolate is firm and enjoy!

  13. I agree this recipe makes absolutely no sense with what ingredients are listed. Talk about confusing
