Bubble Up Breakfast Bake

Ingredients

  • 1 pound of reduced fat breakfast sausage
  • 1 tube of refrigerated biscuits
  • 2 cups shredded cheddar cheese
  • 1 small can of diced green chills
  • 6 eggs
  • Salt and pepper to season
  • 1/4 cup milk

Instructions

  1. Start by preheating the oven to 350 degrees.
  2. Add the sausage to a medium skillet on medium high heat. Cook until no longer pink in the middle.
  3. While cooking the sausage, cut each biscuit into 8 pieces and place in the bottom of a 9x13 baking dish sprayed with cooking spray. Add the sausage to the pan, on top of the uncooked biscuits. Sprinkle cheese on top of that, along with the green chillis.
  4. In a separate bowl, whisk together the egg, salt and pepper and milk. Pour the egg mixture over everything in the baking dish.
  5. Place in the oven for 30 minutes or until a knife comes out clean in the middle of the dish. Be careful, the cheese might make it seem like it's uncooked egg but it's just cheesy goodness.

  2. Is the tube of biscuits “grands” or regular? Sounds fantastic!

    • I had used Grands, and it seemed like it was way too much biscuit! But it was still very good, next time I would use half the tube or use regular ones.

  3. I am making this for the second time and I’m anxious to see how it will turn out. The first time I didn’t have any green chilies. It was still good. The grands buscuits were a lot but still good. This time I’m using the chilies & half feta because I didn’t have enough cheddar. I’m still anticipating it being just as good.

  4. Made this for my son’s breakAny yst when I realized that my husband was only feeding him 2 strips of bacon once I leave for school. Any who, he loved it! Matter of fact it was a big hit with the whole family and super easy to make!

  5. This is my sons’ favorite breakfast bake. It is delicious. I cook a small chopped onion and half a green pepper with the sausage. Easy and delicious. It kamel a lot so we have leftovers wich reheats beautifully. I also use the grand biscuits but leave out two, which I cook and use for breakfast sandwiches.

  6. Made this for breakfast this morning! Not usually good with casseroles… have this thing where I never think it will be enough. Used 8 eggs just to stretch it and used grands biscuits butter flavor. My husband… who says he is not picky… (Which we all know means just use what I like)… said it was now one of his new favorites! Am gonna make with ham for Christmas morning.

  7. I made this for a ladies brunch and it was a hit (omitting the chiles because I didn’t have them). I individually packaged the leftovers and placed them in the freezer for on the go breakfasts. Defrost in 50%power for about a minute than a it 20 seconds on regular power and it’s delicious! So much better than a prepackaged preservative laden breakfast sandwich!

  8. Iade this and it was amazing! Everyone loved it. I added a little extra of eveything. I made it with ten eggs(we’re cheese and egg lovers). I was kinda iffy about it taking 30 mins but it was done and everything was delish! I shared it on facebook. I can’t wait for next time. We’re going to add bacon as well. We didn’t cook it with the green chillies due to the kids not liking them.

  9. This is delicious! I use a tube of grands, leaving out two, and only 1/2 pound of hot breakfast sausage, which is plenty for us. I also leave out the green chilies, I would like them, but others would not touch it if I used them so did not. I love that the leftovers reheat so nicely, I make it on Sundays and we finish it up over the week. Thank you for such a great recipe!

  10. About how many people does it feed? I’m wanting to make it for my Sunday school class and there’s about 15 of us.

  11. In addition to this recipe, i added hashbrowns, and put diced bacon on top. Just a little extra protein.

  12. I also used 4 out of 8 biscuits for one casserole dissh, so it wouldnt be overpowering. :)
